There is a quiet difference between making tea and brewing it well. At Vayu, that difference begins long before the kettle boils—rooted in our own garden, shaped over three generations, and carried carefully into your cup.

Assam tea is known for its depth, body, and unmistakable richness. But to experience it fully, the brewing process matters just as much as the leaf itself.

Start with Good Water

Tea is mostly water, yet it’s often overlooked. Use fresh, filtered water whenever possible. Avoid reboiling water, as it loses oxygen and can flatten the flavour of the tea.

Get the Temperature Right

For Assam tea, the ideal water temperature sits just off a rolling boil—around 95–100°C. This allows the leaves to fully open and release their character without dulling the aroma.

Measure with Intention

Use about 1 teaspoon of whole leaf tea per cup (150–180 ml). Whole leaves expand as they steep, which is why quality matters—you’re not just measuring weight, but potential.

Steeping Time Defines the Cup

Let the tea steep for 3 to 5 minutes, depending on your preference.

  • Shorter steep: smoother, lighter body

  • Longer steep: stronger, more robust profile

Avoid over-steeping, as it can introduce bitterness rather than strength.

Milk or No Milk?

Assam tea pairs beautifully with milk. If you prefer milk tea:

  • Brew slightly stronger

  • Add warm milk after steeping, not during

This preserves the integrity of the infusion.

The Final Cup

A well-brewed Assam tea should feel full-bodied, aromatic, and satisfying—never harsh, never flat. It should carry a sense of place, of soil and season, of careful hands that brought it to life.
